They all appear to be black and white. How do I define new table styles with some colour in?

There is currently no easy way to change the colors of predefined styles.
But if you are an advanced user then you can edit 'tablestyles.dat'

I would but it's in the Programs File folder and, even as an admin user, I don't have permission to overwrite it.
I'll make a suggestion that this file be placed in the <user> Documents/WB15 folder.

If you copy tablestyles.dat to Documents\WYSIWYG Web Builder\system folder then it will use that file instead of the one in the program files.
